Zephyr (or Zefir) is a delicate, marshmallow-like confectionery originating from Russia.
Originally, Russian pastry chefs created this treat using apples and honey.
Later, Western patissiers refined the recipe by incorporating meringue, giving it an even lighter texture.
This new dessert was named "Zephyr" (meaning "west wind")—a poetic reference to its "light, airy melt-in-your-mouth sensation."
